There are numerous ways to break up both of those exercises, but we basically use the following patterns for 8's

Start with 11111111 22222222 then split
31244213 42133124 (keep hands over drums 1 and 2,crossing the hand that is moving over the stationary hand)
Outs - 13131313 24242424
Ins - 31313131 42424242
Tri - 31S31S31 42S42S42
Z - 3S123S12 4S214S21

On chicken and a roll, just get it sounding good on drum 2 before moving it. Then start with easy adjacent drum movements (move check and roll), then you can split each diddle down and back up the drums, and if you are feeling really jiggy, you can try scrapes and crosses on the diddles (ex. 1322132213221322)

I have always done 8's this way:

After that we moved on to: (Round Patterns)

13S13S13 24S24S24 31S31S31 42S42S42
S13S13S1 S24S24S2 S31S31S3 S42S42S4

Next: (All on one hand)

12343432 12343432 12343432
That went on for the full eight measures and then you start over again on the other hand.

I've never heard of Chicken and a roll, but the 8's I play go like this...
