Burning off weight just takes activity. Any activity. Granted, there are ways to healthily speed up the process, it just takes working your body, be it aerobically, anaerobically, getting your cardio boosted, etc.
Do some light weight lifting, or sit-ups/push-ups. Don't eat as much, and exercise some self-control.
All in all, a week off of your feet should NOT take that much fitness out of you. If a week takes your wind away, then you weren't in good shape to begin with. After your week or two, if it feels like, after you finally get out moving again, that you're out of breath, it's probably because your body is still getting over illness, not that you've lost fitness.
